Mondial Forni Mondial Steam Tube Deck Oven
The Mondial Forni Mondial is a traditional masonry steam tube deck oven designed for artisan and production bakeries where baking quality, strong floor heat and intensive steam production are essential.
Combining traditional steam tube baking principles with modern controls, the Mondial provides exceptional thermal mass and distributes heat gently and evenly throughout the baking chambers. It is particularly suited to large breads, high-hydration doughs, artisan loaves and pastry products that benefit from substantial steam and consistent heat from the oven floor.
The Mondial range is available in a wide selection of three and four-deck configurations, with different baking chamber widths, depths and door arrangements. Natural gas, LPG, diesel and wood-fired configurations are available, allowing the oven to be specified around the bakery, production requirements and available services.
Gentle Heat for Exceptional Product Development
The Mondial rediscovers traditional baking principles while incorporating modern oven technology. Its masonry construction, refractory materials and ring-shaped steam tube heating system create a high-mass oven capable of retaining and distributing heat across every deck.
Each steam tube incorporates a double crossbar for every baking chamber, directly heating both the upper and lower areas of the deck. The tubes are individually tested at extremely high pressure to support dependable operation throughout demanding production schedules.
Available Oven Configurations
The Mondial range includes three and four-deck ovens with different chamber widths, depths and door arrangements. The examples below represent three of the principal configurations within the range.
Mondial 32
Three decks with two doors per deck and baking surfaces from 5.1 m² to 8.2 m².
Mondial 43
Four decks with three doors per deck and baking surfaces from 10.3 m² to 20.2 m².
Mondial 44
Four decks with four doors per deck and baking surfaces from 16.4 m² to 26.8 m².
Perfect Baking
The flue gas duct and external oven structure are constructed in masonry. This provides exceptional thermal mass and allows heat to be distributed gently throughout the baking decks.
The high level of retained heat makes the Mondial particularly effective for traditional bread production and products requiring stable baking conditions over long production periods.
Powerful Steam Production
The steam generators are positioned in the lower part of the oven, above the flue gas flow and surrounded by concrete.
Their design enables the oven to produce substantial quantities of steam, including while the burner is not operating. This supports excellent crust development, volume, colour and product finish.
Steam Tube Heating
The ring-shaped steam tube system uses double 27 mm baking crossbars to transfer heat directly to the top and floor of each baking chamber.
This arrangement supports intensive production while maintaining the strong, balanced heat required for consistent baking across the complete oven.
