The STM TWC BIG 2 is a commercial touch water chiller engineered for accurate, repeatable ingredient control in bakeries and food-production environments.
The highest-output model in the listed STM Touch Water Chiller range. Its 300 litre tank supports approximately 150 litre deliveries every 12 minutes from 28°C to 3°C.
Consistent dough starts with controlled water
Water can account for a substantial proportion of a dough recipe. Controlling its quantity and, where applicable, temperature helps reduce seasonal variation, improve batch consistency and support predictable proofing and baking.
