The Mondial Forni Slim is a compact electric rotary rack oven designed for retail bakeries, shops and smaller production spaces where high baking quality is required within a limited footprint.

Slim provides many of the functions associated with Mondial Forni's larger commercial rack ovens, including Bottom-to-Top airflow, touchscreen recipe control, automatic scheduling and optional remote monitoring.

Its plug-in construction allows quick installation without on-site oven assembly. The oven accommodates 40 × 60 cm trays and can be configured with eight, nine or ten tray levels, making it suitable for bread, rolls, pastries and other baked products.

Professional Rack-Oven Performance in a Small Footprint

Slim is intended for businesses that require the performance and consistency of a rotary rack oven but do not have the floor space or access required for a larger production machine.

Its compact dimensions, modern appearance and straightforward installation make it particularly suitable for visible retail locations, in-store bakeries, cafés and production areas with restricted access.

Superior Baking Quality with Bottom-to-Top Airflow

Mondial Forni's BTT, or Bottom-to-Top, airflow system directs heated air from underneath and behind the chamber towards the top of the rack.

This creates a uniform flow of heat across each tray position, supporting consistent colour, internal baking and product development throughout the rack.

The controlled movement of air makes Slim suitable for both bread and pastry products, including items that require an even and relatively gentle transfer of heat.

Simplified Plug-In Installation

Slim is supplied as a compact plug-in oven and does not require assembly assistance during installation.

The oven itself is only 100 cm wide and 120 cm deep, making it suitable for premises where access and floor area would prevent the installation of a conventional rack oven.

A minimum room height of 250 cm is required. Where the oven is moved into position in a disassembled state, the manufacturer specifies a minimum entrance width of 75 cm.

Speed Dry for Greater Crunchiness

Mondial Forni Slim Speed Dry moisture extraction system

The Speed Dry system accelerates the removal of steam and moisture from the chamber during the final stage of the baking programme.

Mondial Forni states that the system can reduce the time needed to evacuate steam from the chamber by up to 70%.

This supports a crisper product surface and can help maintain the desired texture for longer after baking.
