Mondial Forni Basic Compact Rotary Rack Oven
The Mondial Forni Basic is a compact commercial rotary rack oven designed for bakeries, retail shops and production sites requiring strong baking performance without the footprint of a larger rack oven.
Available in electric, natural gas, LPG and diesel configurations, Basic combines uniform airflow, rapid temperature response and straightforward touchscreen operation. It is suitable for bread, rolls, pastries and a wide range of other baked products.
Three rack formats are available, covering 40 × 60 cm, 45 × 75 cm and 60 × 80 cm tray systems. Its compact dimensions and clean, modern appearance also make Basic particularly suitable for installations where the oven is visible to customers.

Basic is designed to provide the flexibility and baking performance of a commercial rotary rack oven within a smaller installation footprint.
Its ability to respond quickly to changes in temperature allows different products and baking programmes to be managed throughout the working day. The oven also maintains effective performance with partial rack loads, helping production respond to changing demand without unnecessary energy use.

Superior Baking Quality with Bottom-to-Top Airflow
Mondial Forni's BTT, or Bottom-to-Top, system directs heated air from underneath and behind the baking chamber towards the top of the rack.
This provides a uniform flow of heat around the complete rack, supporting consistent baking, even colour and strong product development across every tray level.
The controlled airflow is suitable for bread, rolls, pastries and other products requiring reliable heat distribution without excessively aggressive air movement.
Speed Dry for a Crisp, Lasting Finish
The optional Speed Dry system accelerates the removal of steam and moisture from the baking chamber during the final stage of a programme.
Mondial Forni states that Speed Dry can reduce chamber steam evacuation time by up to 70%. This helps create a crispier product surface and can support a longer-lasting finish after baking.
The system is particularly beneficial for crusty breads, rolls and other products where controlled moisture removal is important.
Compact and Adaptable Rack System
The Basic turntable and lifting hook can be configured for compatibility with different rack types. Three oven sizes are available, allowing the machine to be matched to the bakery's existing tray system and production output.
Basic 4060
Compact model for 40 × 60 cm trays, with a total baking surface of 3.6 m².
Basic 4575
Medium-capacity model compatible with several tray formats, including 45 × 75 cm, with a total baking surface of 5 m².

All models require a minimum room height of 240 cm. Combustion versions require a 1.5 kW, 400 V electrical supply in addition to the selected burner fuel.
The 4060 electric model is available with either a 21.6 kW heating package or a higher 28.8 kW package. The higher-power version is recommended by the manufacturer for baking fresh or frozen bread.
Rack and Tray Options
Rack capacity can be configured with 10, 13, 15, 18 or 20 tray levels. The corresponding spacing between shelves is approximately 140, 107, 93, 77 or 69 mm.
