Mondial Forni Techno Rotary Rack Oven
The Mondial Forni Techno is a flagship commercial rotary rack oven designed for bakeries and food-production sites requiring exceptional baking uniformity, high output and maximum production flexibility.
Available in electric, gas, LPG and diesel configurations, Techno combines advanced airflow management with precise touchscreen control. Its rotating rack system and carefully engineered air distribution provide consistent results across every tray, supporting bread, rolls, pastries and other baked products through both short and intensive baking cycles.
The Techno range accommodates a wide selection of rack and tray formats, from compact 46 × 76 cm racks through to high-capacity double-rack configurations. Standard and high-rack options are available, allowing the oven to be specified around existing bakery equipment, production requirements and available floor space.
Flagship Rack-Oven Performance
Techno is designed to deliver uniformity, product development and flexibility across demanding commercial production schedules. Its airflow systems distribute heat gently and consistently around the complete rack, helping to avoid uneven colour and variation between trays.
The oven performs effectively with both full and partial rack loads. This allows production to respond to changing demand without requiring the chamber to be completely filled, helping to reduce unnecessary energy use during quieter periods.

Superior Baking Quality with Bottom-to-Top Airflow
Mondial Forni's BTT, or Bottom-to-Top, system directs heated air from beneath and behind the baking chamber towards the top of the rack.
This carefully controlled airflow reaches the complete rack without aggressively striking delicate products. It supports even internal baking, consistent colour and excellent product development from the lowest trays to the highest.
The system is suitable for a broad range of products, including bread, rolls, pastries and products requiring a gentle but effective transfer of heat.
Speed Dry for Improved Crust and Shelf Life
The optional Speed Dry system accelerates the removal of moisture from the baking chamber during the final stages of a programme.
Mondial Forni states that Speed Dry can reduce the time required to evacuate steam from the chamber by up to 70%. This supports a crispier finish and can help maintain product quality for longer after baking.
The system is particularly useful for crusty breads, rolls and other products where a dry, well-developed surface is important.
Double Air Flow for Intensive Baking
The DAF, or Double Air Flow, system introduces hot air into the baking chamber from two directions.
This produces a more homogeneous distribution of heat across the rack and supports uniform results during intensive or short baking programmes.
DAF is particularly valuable where products require rapid heat transfer while maintaining consistent colour and development across every tray position.
Efficient Combustion Models
Combustion-powered Techno ovens use Mondial Forni's Turbolator system within the heat exchanger.
The Turbolator is a helical core positioned inside the heat-exchanger tubes. It improves heat transfer from the combustion gases into the oven and reduces the temperature of the gases leaving the heat exchanger.
According to Mondial Forni, the flue-gas temperature does not exceed the selected chamber temperature by more than 50°C, helping to reduce wasted energy.

Five-Level Airflow Control
Techno's inverter-controlled fan provides five selectable airflow levels. This allows the movement of air through the chamber to be adapted to the product rather than relying on one fixed fan speed.
Delicate Products
Lower airflow settings help protect lightweight, fragile and finely laminated products.
Bread and Rolls
Medium airflow settings provide effective heat transfer while maintaining product development and crust quality.

Rack capacity depends on the selected tray spacing and rack specification. Standard racks can generally be configured for 10, 13, 15, 18 or 20 tray levels, while selected models also support taller high-rack arrangements.
