Mondial Forni Ecomondial Steam Tube Deck Oven
The Mondial Forni Ecomondial is a commercial steam tube deck oven designed to combine the baking quality of a traditional tube oven with more responsive and flexible temperature management.
Its stainless steel structure allows the baking decks to change temperature more quickly than a traditional masonry oven, making Ecomondial suitable for bakeries producing a broad range of breads, pastries and other baked products throughout the working day.
Ecomondial provides the strong floor heat and substantial steam required for traditional bread production while offering improved production flexibility, digital control and automated steam discharge. Products can be baked directly on the deck or on trays, with manual and semi-automatic loading systems available.
Traditional Baking with Greater Temperature Flexibility
Ecomondial is designed for products requiring strong heat transfer through the baking chamber floor together with a significant quantity of steam. This supports excellent product volume, crust development, colour and finish.
Unlike a traditional masonry steam tube oven, the stainless steel construction allows the decks to respond more rapidly to changes in temperature. This makes it easier to move between different products and baking temperatures while retaining the gentle and consistent baking characteristics associated with steam tube ovens.
Available Oven Configurations
Ecomondial is available with three, four or five baking decks, with two or three doors per deck and a choice of two chamber depths.

Three decks with two doors per deck and baking surfaces from 6.1 m² to 8.1 m².

Four decks with three doors per deck and baking surfaces from 12.3 m² to 16.2 m².

Production Dynamism
The stainless steel oven structure enables the temperature within each deck to change more quickly than in a traditional masonry oven.
This increased responsiveness gives bakeries greater flexibility when changing between different products, temperatures and production schedules while retaining the characteristic baking quality of a steam tube oven.
Lower Consumption
Ecomondial uses a specialised flue gas management system that allows lower-powered burners to be installed.
This can reduce fuel consumption and may also lower the cost and complexity of the required burner installation, depending on the selected model and site services.
