The STM TWC BIG 1 is a commercial touch water chiller engineered for accurate, repeatable ingredient control in bakeries and food-production environments.
Large industrial touch water chiller for major bakery production lines. The 300 litre tank supports approximately 150 litre deliveries every 12 minutes from 27°C to 3°C.
Consistent dough starts with controlled water
Water can account for a substantial proportion of a dough recipe. Controlling its quantity and, where applicable, temperature helps reduce seasonal variation, improve batch consistency and support predictable proofing and baking.
